

Once the biscuits are fully cooled, pipe the buttercream on half of the biscuits and sandwich together with the other half, and that's it. Meanwhile mix together the filling ingredients until smooth and creamy.Take them out when they are nearly hard but not quite firm as they will continue cooking when cooling. Transfer the rectangles onto a lined baking tray and then cook in a preheated oven on 180C for 15-20 minutes.If you haven't got a special bourbon cutter (available on eBay for a few pounds), use a toothpick to press some dots into half of the rectangles. Flour your worktop and rolling pin, then roll out the dough to a thickness between a 50p and a £1 coin.Leave in the fridge for one hour, overnight or for a couple of days.If it's too wet add more flour, or two dry add more margarine. But what surprised me the most was how easy the method was.
